Very tasty chicken with a pesto sauce with mixed spiralized courgette. A favourite of mine for dinner, which is super quick and easy to throw together. Paleo friendly dish.

Ingredients
Sauce
- 1/2 Cup olive oil Extra Virgin (add more if you want the sauce runnier)
- 4 Cloves garlic Pressed
- 1 Cup basil leaves (gentle pressed down)
Main
- 2 Whole Chicken Breast Grass Fed and diced into cubes
- 4 Whole Cougettes Spiralised
- 1 Red Onion Sliced
- 1 tbsp olive oil Extra Virgin

Instructions
For the body of the dish
- Put a tablespoon of olive oil in the a wok or pan, and fry the onions until soft, roughly 2 minutes. Add the chicken and fry until cooked through and slightly golden in colour. Then toss in the spiralised courgettes, and heat until they go slightly soft. When they go soft, turn the heat off, and cover with a lid to keep warm. Next make the sauce
For the sauce
- Using a food processor, add all the ingredients and whizz up until a paste has been made and then add to the pan. Heat through for about 3 minutes, and then serve. Optional sesame seeds to add taste and decoration.
