Carob Avocado Mousse

Rich, glossy and deeply satisfying โ€” a chocolate-like mousse that takes five minutes to make and feels utterly indulgent.

Best served in small glasses or ramekins, chilled until set.

Method

  1. 1Add all ingredients to a blender or food processor.
  2. 2Blend until completely smooth and glossy โ€” scrape down the sides as needed.
  3. 3Taste and adjust honey to your preference.
  4. 4Spoon into glasses or ramekins. Chill for at least 30 minutes before serving.

Notes

  • Use very ripe avocados for the creamiest result.
  • Carob is naturally sweeter than cacao โ€” start with less honey and adjust.
  • Keeps in the fridge for up to 2 days, covered.
  • A pinch of extra salt really lifts the flavour.
