Soft AIP Ice Cream

Scoop directly after churning for a soft-serve texture, or freeze briefly for a firmer scoop.

Method

  1. 1Add coconut cream, banana, honey and vanilla to a blender.
  2. 2Blend until completely smooth.
  3. 3Churn in your ice cream maker according to manufacturer’s instructions (usually 20–25 minutes).
  4. 4Serve immediately for soft-serve, or transfer to a freezer-safe container and freeze for 1–2 hours for a firmer scoop.

Notes

  • Use very ripe bananas — they add natural sweetness and creaminess.
  • If it freezes too hard, leave out for 10 minutes before scooping.
  • No ice cream maker? Freeze the blended mixture, blending again every 30 minutes until creamy.
  • Add a pinch of sea salt to enhance the flavour.
