  1. Melt the coconut oil in the pan and add the onion until soft. Add the chicken and fry for 4-5 minutes until cooked through. Add the rest of the vegetables. Fry until the sweet potato starts to soften.
  2. Add the coconut milk and then mix in the spices and parsley. Cover with a lid and cook for a further 10 minutes.
  3. Serve with rice or cauliflower rice. Add avocado to the top for a different flavour.
